Executive Chef | Michael Slintak
Chef Michael Slintak has been an executive chef here in Florida for over a decade. Originally from New York, Michael is a graduate of the Culinary Institute of America. Michael comes to Backwater previously holding executive positions at the Hilton Doubletree Melbourne Beach and Shula’s Steakhouse in Miami Beach.
Michael’s Puerto Rican and Slovak descent reflects the eclectic varieties in the dishes and presentation he has crated for 25 years. With a background in ice & vegetable carving, Michael has always kept the fresh quality of food and presentation in the foreground of his dishes. Chef Slintak is excited to bring his culinary team to downtown Melbourne and aims to enhance the local dining experience.
Sous Chef | Anthony Cruz
Anthony came to us as the former lead cook at Mango Tree and Prato (Winter Park). With stops along the way at Chavo Guac and Le Rouge (Orlando), Anthony's abilities to make Backwater yet another great experiential stop along his chef's map his priority.
